Gingerbread Cookies | Christmas Recipes | #Blogmas

Today's post for #Blogmas 2018 is all about my easy gingerbread recipe, that is perfect for baking with children. Squidgy absolutely loves to bake with me (she must have caught my love of making homemade treats!) and recently we made the most amazing gingerbread biscuits using this recipe.

Ingredients

  • 350g plain flour

  • 100g butter

  • 5 1/2 tsp ground ginger

  • 1 1/2 tsp ground cinnamon

  • 1 tsp bicarbonate soda

  • 175g light brown sugar

  • 4 tbsp golden syrup

  • 1 egg

Method

  • Mix the flour, butter, ginger, cinnamon and bicarbonate of soda with your fingertips until crumbly.

  • Mix in the sugar, syrup and egg until a pastry is formed.

  • Dust your worktop with flour, then roll out the pastry to approximately 5mm thick.

  • Use cutters to cut your pastry into the shape you desire.

  • Place the cut out pastry on a greased or non-stick baking tray. I often place them on a layer of baking parchment as a quick and easy way to prevent sticking.

  • Preheat your oven to 180°C / Gas Mark 4.

  • Bake until golden. If you check at around 10 minutes into the bake as some ovens may cook them quicker than others. My fan assisted oven bakes them in around 12 minutes but our gas oven in our previous home took about 15 minutes.

So there you are. A super easy recipe to enjoy with your children (or by yourself!) just like I did with Squidgy.
